Recipe
⏱ 40 min Serves 2 10 ingredients
Ingredients
- 1 cup arborio rice
- 8 oz cremini mushrooms, sliced
- 3 cups low-sodium chicken or vegetable broth
- 1/2 cup dry white wine
- 1/2 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp unsalted butter
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp olive oil
- salt and black pepper to taste
Directions
- Warm the broth in a small saucepan over low heat and keep it hot throughout cooking.
- In a medium heavy-bottomed pan, heat olive oil and 1 tbsp butter over medium heat, then add the mushrooms and cook undisturbed for 3 minutes until golden. Season with salt, stir, and cook 2 more minutes. Remove mushrooms and set aside.
- In the same pan, add the remaining butter and sauté the onion for 3 minutes until softened, then add the garlic and cook 1 minute more.
- Add the arborio rice and stir constantly for 1 to 2 minutes until the edges of the grains look slightly translucent.
- Pour in the white wine and stir until it is almost fully absorbed.
- Add the warm broth one ladleful at a time, stirring frequently and waiting until each addition is absorbed before adding the next. Continue for about 20 minutes until the rice is creamy and just tender with a slight bite.
- Fold in the reserved mushrooms and Parmesan, taste and adjust salt and pepper, then let the risotto rest off the heat for 1 minute before serving.
