- 3 cups butternut squash, peeled and cubed into 1-inch pieces

- 16 fresh sage leaves

- 1/2 cup reserved pasta water
- 1/2 cup grated Parmesan cheese
- 1/4 tsp crushed red pepper flakes

Directions
- Toss butternut squash cubes with olive oil, salt, and pepper and spread on a baking sheet. Roast at 425°F for 22 to 25 minutes, flipping once, until golden and tender.
- Cook pasta in a large pot of well-salted boiling water until al dente. Before draining, scoop out 1/2 cup of the starchy pasta water and set it aside.
- While the pasta cooks, melt butter in a large skillet over medium heat, swirling occasionally, until it turns golden and smells nutty, about 3 to 4 minutes.
